… a MellOnWheels Healthy Campsite Crockpot Recipe
This recipe is adapted for the campsite, from a “Biggest Loser” recipe. It is compatible with the Weight Watchers Simply Filling Technique. Nutritional Information is listed, at the bottom of this post.
- 1 Large Yellow or White Onion, chopped
- 1Tablespoon Chopped, Minced Garlic
- 1 Tablespoon Taco Seasoning (I used 2)
- 2 Cans Fire Roasted Tomatoes (14.5 oz each)
- 1 Can Black Beans (15.5 oz)
- 1 Can Red Beans (15.5 oz)
- 1 Can Pinto or White Beans (15.5 oz)
- 4 Cups Fat-Free Chicken Broth
- 1/2 Cup Chopped Cilantro
- 8-Ounces Frozen, Chopped Spinach
How much easier can this get? Open the cans of beans and tomatoes, and dump them in the crockpot… along with the frozen, chopped spinach. Open the box (or cans) of chicken broth and pour it in there, too. Chop the onion and the cilantro and throw them in there. Add the taco seasoning and the minced garlic. Stir well and set the crockpot to low, for 6-8 hours. About 30-minutes after you start it, stir to make sure the taco seasoning is mixed well. That is all!
I don’t know why I have never used Fire Roasted Tomatoes, before… guess I never even noticed them. But, when I opened those cans, I decided that I was going to use that kind, much more often. They looked and smelled so good!
I put this in the crockpot, and went to work. My hubby came home from work, several hours before I did. He texted me that he had eaten 3-bowls of it, and it that it was absolutely delicious! Well… I guess so, if he had 3-bowls of it. LOL
